The famous Gouda cheese

One of the most consumed cheeses by the Dutch is gouda, a semi-hard, yellow cheese with holes, made from pasteurized cow’s milk. Its name comes from the city of Gouda, where it originated and where a famous cheese market is held.

 

Gouda cheese has different degrees of maturity, ranging from 4 to 6 weeks, up to the old cheese, which is more than a year old. Its flavor varies from the smooth and creamy of the young one to the strong and spicy of the old one.

Maasdam cheese is a relatively new Dutch cheese, which was created in the 1980s as an alternative to Swiss Emmental cheese. It is an ideal cheese to eat alone or to melt in sandwiches or gratins.

Some examples are leerdammer, a cheese similar to maasdam but milder; leyden, a cheese flavored with cumin; boerenkaas, a cheese made from raw milk; or limburger, a cheese with a strong odor and spicy flavor.
